This recipe had been sitting out to try for awhile and I finally got around to it. It was fantastic! I love a good potato soup and this one will definitely be made again and again.
Loaded Baked Potato Soup
4-6 potatoes (baked, peeled and cubed) I didn't peel mine.
1/2 cup butter
1/2 cup flour
2 tsp. chicken bullion
Salt and Pepper to taste
1 tsp. minced garlic
6 cups milk
16 oz. sour cream
1 package bacon strips, cooked and crumbled
1 can corn, drained
shredded cheddar cheese
Instructions:
In a large saucepan, melt butter on low heat. Stir in flour and seasonings. Gradually add milk and turn up to medium heat. Add minced garlic. Stir continuously until it boils. Cook and stir 2 minutes until thick. Remove from heat. Whisk in sour cream. Add potatoes, corn, and bacon. Serve in bowls and top with cheese.

Carly's Crock Pot Chili
My good friend Carly, is my foodie buddy. We love to share recipes and tell each other when we ate or made something really good. It's fun to have someone that loves to cook and eat as much as I do! She gave me this great recipe for Chili and it was perfect for a chilly fall day. Thanks Carly!
Carly's Crock Pot Chili
1 lb hamburger or sausage, browned with minced garlic and onion
2 cans diced tomatoes
2 cans tomato sauce
2 cans chili beans
1 can kidney, pinto, or black beans
1 1/2 Tbsp. chili powder
1 tsp. cumin
1/2 tsp. salt
1/2 tsp. pepper
dash of cayenne pepper (if you like it spicy)
Or you can use a chili packet, I didn't have one so I just threw in what spices I had.
Put it all in the crock pot and cook on low all day. (Mine wasn't very spicy, because I wanted the kids to eat it. If you want it spicier, add more chili powder and cayenne pepper.)

Tortellini Sausage Soup (our favorite soup recipe)
1 lb sausage (most flavors work fine)
2-3 T garlic, minced
1 onion, diced
½ c. water
2 cans chicken broth
½ c. apple cider or juice
1 16-oz. can diced tomatoes
1 8 oz. can tomato sauce
1 c. sliced carrots
1 tsp. dried basil
1 tsp. dried oregano
2 medium zucchini, grated (sometimes I use broccoli, cut-up)
8-10 oz. package cheese tortellini (check the freezer section of your grocery store; if you can find it there, it will almost always be way cheaper than fresh tortellini)
2 Tbsp. dried parsley
Cook sausage over medium heat, add onions and garlic and cook through.
Add tomatoes, tomato sauce, juice, water, chicken broth, carrots, oregano, and basil. Cover and simmer for 1/2 hour. Add parsley and zucchini and simmer for another 15 minutes or so.
Add the tortellini and cook until tender.

Chicken Cream Cheese Soup
It snowed A LOT the other day, leaving me with a craving for soup. I've had this recipe out to try so I finally did and it did not disappoint. Tyler absolutely loved it and he's not one to give much expression about his food. It's definitely one of my favorite soups now.
1 lb chicken (breasts or combination)

Chicken Cream Cheese Soup
1 lb chicken (breasts or combination)
1 onion, diced
1-2 Tb butter
2 handfuls baby carrots (about 2 cups sliced small)
4-5 potatoes, diced small
1 c milk
1/4 c flour
8 oz package cream cheese
1. Put chicken in pot and cover with water; boil until cooked. Take chicken out of water but keep the broth. When chicken is cool, shred.
2. Saute onion in butter. Put onion in pot and add carrots and potatoes. Add 3-4 cups of broth or enough to cover vegetables. Add bouillon cubes or soup base for flavor (I add 4 bouillon cubes). Bring to a boil and simmer until veggies are tender.
3. Mix flour with milk and add to soup. Soften cream cheese in microwave then add to soup in little pieces and stir until melted. Season with salt and pepper.

Vegetable Beef Soup
I got this recipe from my ward cookbook. It was a delicious soup and the kids gobbled it up. Even Katelyn, who is very picky! Yummy!
Vegetable Beef Soup
1 lb. ground beef
2 tsp. salt
1/4 tsp. pepper
1/2 cup chopped onion
2 medium carrots, chopped
2 medium potatoes, cubed
1 stalk celery, chopped
1 can corn (undrained)
1 14.5 oz can diced tomatoes (undrained)
1 cup water (I added quite a bit more, it wasn't "soupy" enough for me)
1 Tbsp. Worcestershire sauce
1 can tomato sauce
2 cups macaroni noodles
1 bay leaf
In a deep pan, brown ground beef and onion and drain. Stir in remaining ingredients. Simmer, covered, 20-25 minutes or until vegetables are tender and noodles are cooked. Stir occasionally. Remove bay leaf and serve.

Cheesy Broccoli Soup
At my "Friend Christmas Party" this year, my friend Rachel brought this soup. I loved it so much! We had it in bread bowls that made it even better and I've been dying to make it again!
Cheesy Broccoli Soup
Steam or cook: 2 stalks of broccoli
1 large carrot chopped
1 bunch of green onions chopped
Melt 1/4 LB butter, add 1/3 heaping cup of flour. Heat until bubbly and well mixed.
Remove from heat and add:
2 1/2 C half and half
1 1/2 C water
5 chicken bouillon cubes
Heat until cubes dissolve and add 6-8 slices of processed cheese. Stir until melted and well mixed. Stir in Veggies.

Creamy Chicken Noodle Soup
I made this soup this week and it was delicious! Tyler said it was the best soup he'd ever had!
I'll definitely be making this a lot this fall/winter. I got the recipe from one of my favorite recipe blogs.
Creamy Chicken Noodle Soup
4 cans chicken broth
1 T chicken bouillon
1 cup carrots, chopped
1 cup celery, chopped
1/2 medium onion, chopped
16 oz. home style egg noodles
2 1/2 cup cooked, chopped chicken breast
2 cans cream of chicken soup
1 can 12 oz evaporated milk
Boil the broth, bouillon, carrots, celery and onion for 20 minutes, or until tender. While the vegetables are boiling, boil the noodles in a separate pot. I add another bouillon cube so the noodles get some flavor. Then add the chicken, cream of chicken soup, canned milk and noodles. Heat thoroughly. Add pepper to taste.

EASY Taco Soup & Homemade Chips
I got this recipe from a friend last week. It is amazingly easy and sooooooooooo good! Plus, I already had all the ingredients in my food storage! I haven't tried the chips yet, because I already had some chips out. I will next time!
Easy Taco Soup and Homemade Chips
1 can chili with beans
1 can whole kernel corn, with liquid
1 can diced tomatoes, with liquid (I use diced tomatoes with green chilies)
1 can tomato sauce
1 can black beans, with liquid
1 1/2 - 3 Tbsp taco seasoning
Shredded cheese (to go on top when serving)
I had 1/2 pound of cooked sausage that needed to be eaten so I threw that in too. It was great with it, but would still be yummy without it.
Combine all ingredients in greased slow cooker. Cover and cook on low for 6-8 hours. Makes 4-6 servings. (If you don't already use the slow cooker bags to line your crockpot, you MUST try them! They make clean up so easy!)
Homemade Chips:
Cut tortillas into pieces. Place on cookie sheet and bake at 375 degrees for 5 min.

I don't normally eat soup in the summer, but my sister who is pregnant has been craving this soup like crazy. At first, I was making fun of her, but since I am also pregnant and she mentioned food, I have been craving it too! At least it's made in the crock pot so it doesn't heat up the house. It's SO VERY GOOD!
8 cups diced potatoes (about 8-10 potatoes)
1/3 cup chopped onion
1-2 cups chopped celery
3 chicken bouillon cubes
6 cups water
1 can cream of chicken soup
Salt and pepper, to taste
1 8 oz. cream cheese (I always use light)

green onion (optional for garnish)

Vegetarian Chili
This super-duper easy recipe has turned into our favorite! I make it in my huge crockpot and cook on low all day. It's so healthy too.
One bag of pinto beans (be sure to soak the beans first!!!)
One bag of garbanzo beans (soak 'em!!!)
Three large cans of diced tomatoes
One 4 oz. can green chiles (optional)
One small diced onion
Two diced green bell peppers
4-5 diced celery stalks
One packet of chili seasoning
Of course, you can add more or less of anything, and you can add as many veggies as you want. Sometimes I add a can of corn for more color.
To serve, spoon into bowls and mix in a big scoop of sour cream in each bowl. Top with shredded cheese and green onions.

White Chicken Chili
I've always wanted to try this and a girl at work gave me a really great recipe. My hubby doesn't like regular chili so I thought I'd give this one a try. It was really good!!!

1 medium chopped onion
1 1/2 teaspoon garlic powder
1 tablespoon vegetable oil
2 cans Great Northern beans, drained and rinsed
1 (14 oz.) can chicken broth
2 (4 oz.) cans green chilies
1 teaspoon salt
1 teaspoon cumin
1 teaspoon oregano
1/2 teaspoon pepper
1/4 teaspoon cayenne
1 cup sour cream
1/2 cup whipping cream (not Cool Whip)
Saute chicken, onion and garlic in oil until chicken is no longer pink. Add beans, broth, chilies, and spices...boil together then simmer for 30 minutes. Remove from heat and add sour cream and whipping cream. Stir and serve.

Easy Chicken Noodle Soup
4 cups chicken broth
carrots
celery
1 cup cooked chicken
3/4 cup egg noodles
pepper
Mix chicken broth, pepper, carrots and celery in pot. Heat to a boil. Boil for 3-5 minutes depending on how soft you want your carrots. Stir in noodles and chicken and cook on medium heat 10 minutes or until noodles are soft.
Notes-
I usually double the recipe so I have leftovers and I just kind of eyeball it. If it looks too brothy (don't think that's a word) add more noodles, if it looks too thick, add more broth. You really can't mess it up.

I crave soup in the Fall and this recipe is a great tasting soup that's very easy!
2 cans Tomato Soup
1 can water
Carrots, chopped (however many you want)
3-4 potatoes, diced (however many you want)
1/2 - 1lb. browned and seasoned hamburger or sausage (I like sausage)
chopped onion or dehydrated onion
Salt and Pepper
Garlic Salt
I also sprinkle some Italian Seasoning in
Mix in crock pot and cook on low all day or on high for a few hours if your short on time.

Mexican Soup

Another one of Ali's recipes. Sooooo good.
1 1/2 pound chicken (cooked and cut up)
1/2 C chopped onion
1-2 garlic cloves
2 chicken bullion cubes
1 C hot water
2 C half and half
2 can cream style corn
1 can diced green chiles
4 t Tabasco sauce
1 t cumin
3 T butter
Cook on low for one hour. Add 1 cut up tomato, chopped fresh cilantro, shredded Monterrey Jack cheese. Cook until cheese is melted. Serve with chips, sour cream and avocado.

Chicken Taco Soup
2-3 frozen chicken breasts 1 large can diced tomatoes
1 cup salsa
1 packet taco seasoning
1 can Cream of Chicken soup
1 can mild green chilis
1 can black beans, drained
Add everything to crock pot and cook on low for 8 hours. Remove chicken after 8 hours and shred. Return chicken to soup mixture. Serve with cheese, sour cream and tortilla chips.
