Peanut Butter Cup Cupcakes

My good friend, Janiel, is a great baker. She made these on our annual Girls St. George trip and they were amazing!  I came home and made them for a family party and they were devoured.  I could eat the frosting by the bucket. 

Peanut Butter Cup Cupcakes

 Peanut Butter frosting:
1 (8 ounce) package cream cheese, softened
1/2 C creamy peanut butter
6 C powdered sugar
1 t vanilla
dash salt
5 T milk

Make your favorite chocolate cupcake recipe.  When they come out of the oven, push a peanut butter cup into the center of the cupcake and let the cupcakes cool.  Frost with peanut butter frosting and the top with a miniature peanut butter cup.  Yum! 

Rainbow Cupcakes

The kids and I made these adorable cupcakes on St. Patrick's Day. They were so much fun! You seriously couldn't help but smile while you were eating them! I found them at The Fickle Pickle.

To make delicious cupcakes...

I found this tip in "blog land" on how to make your cupcakes always taste great when using a box cake mix...

Replace the water called for with 1 cup buttermilk
Use the amount of oil that's called for on the box
Add one more egg than the box says

I've done this a few times and the cupcakes are always moist and delicious!

Daisy Cupcakes

For Katelyn's birthday, I made daisy cupcakes. They were a cinch to make and looked really cute on a cupcake stand.

Make your cupcakes however you normally would. I used a chocolate cake mix to make it look like dirt. When completely cool, frost them. I used white frosting with green food coloring.

Now for the petals...take a large marshmallow and cut it into thirds with sharp kitchen scissors. Put the marshmallows sticky side up and sprinkle with sprinkles. Whatever kind you like. I think the Non Pareils look the best, but that's just my opinion.

Now, put a yellow DOT gumdrop candy in the center of the cupcake for the center and arrange the petals around it. You can use four or five petals. Either way looks good. Now you're done and have an easy and cute party treat!
